Gluten Free in Epcot (mexico)

We are going to be a Disneyworld at the end of August. My daughter has celiac disease (gluten allergy). One of her favorite counter service restaurants is La Cantina De San Angel. Does anyone know if the nacho cheese and chips are gluten free? I emailed special diets and they said to ask the manager when arriving. I'm hoping to get the information ahead of time for planning purposes.
 
I don't know about the cheese (we're dairy free so I haven't asked) but I do know that the chips aren't gluten free because they're cooked in the same fryer as gluten containing foods. The soft corn tacos are gluten free as is the rice and pico de gallo. At least this was true the last I heard.
 
You won't get the information ahead of time for Disney. With an allergy, you let the CM taking orders know that you have an allergy and they will get a manager for you. At this point, the manager handles everything. S/he will bring out the ingredients binder for you to review before placing your order, and then the manager will take care of it from there.

Because vendors change so often, Disney will not give you the ingredients info in advance. It can be a pain, but it really is the safest thing for them to do.

We were there for 11 days in June and will be going back over Christmas. I will be looking at the binder at every snack stop and CS location because I don't want to make any assumptions that could make me sick.

I have celiac and when I was there in 2010 I ate at the sit-down restaurant but not counter service. I found every restaurant was so accommodating to a guest with an allergy. When you get there just ask for the manager who can go over everything with you. Since things can change daily, they wouldn't be able to tell you what the case is today.
