Gluten-free duck on property?

I'm bringing my husband for our first trip together in a few weeks, and he has an obsession with finding the best places to order duck. He also has celiac disease, so this rules out some of the places I know have it on their menu. (Hiding the Jiko menu from him until we get there ). Any suggestions of restaurants we might have luck finding gluten-free duck at on property?

I'd start with the MDE app, searching for 'duck'. Here is s story from 2022 that might help you a bit.

Finally, you know with one of the major spokes ducks for WDW is a Duck, not sure you'll find a lot of duck on the menu as Donald gets a tad upset at the mere mention of it.

I’m partial to Morimoto Asia but I’m not sure if it’s gluten free. Looks like the tortillas can be substituted for lettuce wraps, and just get the rice/noodles separately served for you? (I’ve never tried, hopefully someone else knows and will chime in.)

I can say the duck is delicious.
