Gluten Free Cookie Ice Cream Sandwiches

We've been looking at Disney food porn all day and saw some yummy photos of the custom cookie ice cream sandwiches. I saw that they have them in France at Epcot made from macarons, but what about elsewhere? In a related question, what, if any, gluten free offerings are available at Sleepy Hollow at the Magic Kingdom? Our trip is in December and will only be our second trip since my daughter's gluten intolerance was diagnosed. Thanks in advance!

We just got back and nothing was available at Sleepy Hollow. The last two trips we have found whereas there may be more locations with gf options, they are all the same options. Gone are the days where my DD could order basically anything on the menu and the chef would find a way to make it. Now they have the allergy awareness menus and they don't like to deviate from them. Desserts are usually made from the prepackaged brownie.
