Give me a great Easter dessert recipe!

I say make a trifle - it's easy and delicious!

You'll need a trifle bowl or any large clear glass bowl will work
Bake a chocolate or fudge cake (box mix is fine to save time)
Cool Whip (it holds up better in this dessert than real whipped cream)
Oreo cookies (or equivalent)
Chocolate pudding (again, box mix is fine)

Bake the cake and let it cool completely - cut up into bite size pieces
Mix up the pudding and let it set in a bowl
Crumble the cookies

Layer into your serving dish:
Cake
Pudding
Cool Whip
Cookies
Repeat and be sure to finish the top with Cool Whip and cookie crumbles

Our family loves this and I've found it a great use for leftover cake! You can do it with yellow cake, vanilla Oreos and fruit - tastes great too and a little more "Spring time." It will keep in the fridge for a day but the cookies will get soft.
 
Well one of our favorites is very simple and they come out beautiful. Chocolate covered strawberries. We do both white and milk chocolate and we cover some with Coconut and some with crushed nuts. It's very simple but a huge hit!

Chocolate cake mix
1 cup chocolate chips
crushed walnuts
thawed cool whip
chocolate pudding


bake cake mix according to directions ( add 1/2 cup chocolate chips to batter) COOL

make chocolate pudding..put in fridge

Once the cake is cooled...cover the top of the cake with the chocolate pudding...spread evenly over the top

put cool whip over the top of the pudding..spread evenly over the top

sprinkle chopped walnuts and the rest of the chocolate chips over the cool wip.

This is the choc cake recipe on the box of Hershey's Cocoa powder. Prepare as a 2-layer round cake, cover with choc frosting or ganache of your choice. Then around the edge of the top layer place yellow peeps (chicks, not bunnies), facing out. Finish with chocolate chips placed on the top surface, within the peeps. Makes an awesome sunflower!!! :cutie:

This is a neat use of jello. I used Strawberry, Lime, Pineapple, and Berry Blue jellos the first time I made it, then picked Tropical Fusion, Black Cherry, Lime, and Lemon. Both looked very springy, and very much like a stained glass window. :confused3 :goodvibes
 
I have a wonderful whipped cream frosting I make to use on any cake. I make a box chocolate cake using two 9" pans. Cool completely. Frosting recipe is as follows:

2 c. whipping cream
1 pound of x-sugar (its simple to just purchase the 1# box so you don't have to measure).
3-6 T cocoa (depends on how much chocolate you like).

Whip the three ingredients together on high until stiff peaks form or its thick. Frost between the two layers, on top and sides of cake. Refrigerate!

Hint - my Mom told me whipping cream works best if you chill the bowl, beaters and whipping cream in the frig for a few hours (I just dump the whipping cream in the bowl and put the beaters in the bowl also). :)

Its our family's FAVORITE for all special occasions and then some!!!!! ENJOY!
 
This is sooo simple!!

Brownie Mix- make as directed
Cool
Top with cool whip
Cut strawberries in half and place in rows on top of brownies
Drizzle chocolate "Hard Shell" or "Instant Shell" ice cream topping over strawberries
Refrigerate

I first made this when my daughter started lifeguarding at the beach to take into work. My son is now lifeguarding and every summer I have had requests/begging to send it in again. :) This have been for seven summers - it has become a legend. :rotfl: I will run into the former guards and they all remember the brownie dessert.
 
Eclair Cake--a classic and VERY easy and quick

2 boxes French Vanilla instant pudding (the regular sized ones)
8 oz. Cool Whip
Graham Crackers
1 jar chocolate frosting
3 1/2 cups milk

Mix pudding and milk, fold in Cool whip. Place layer of graham crackers on bottom of 13x9 container. Pour half of pudding mixture over crackers. Put another layer of crackers down. Spread remaining pudding mixture, topped with another layer of crackers.

Melt frosting in MW for 45seconds--minute. Pour over top. Put in fridge overnight.
 
From the Better Homes and Garden Cookbook - Brownie Pudding.
Step 1:

1 c flour
3/4 c sugar
2 T unsweetened Cocoa Powder
2 tsp baking powder
1/2 c milk
1/2 tsp salt
2 T cooking oil
1 tsp vanilla
3/4 c walnuts (optional)

Step 2:
3/4 c sugar
1/4 c cocoa powder

Step 3:
1 3/4 c boiling water

stir together dry ingredients in first list, add liquid ingredients and stir til smooth. Add nuts if desired.

Transfer batter to an 8x8 glass pan - spread evenly.

Mix together dry ingredients of step 2. Sprinkle evenly over the top of batter.

When ready to cook gently add boiling water - pouring evenly over the top of the batter.

Bake in 350 oven for 45 minutes until toothpick inserted into cake comes out clean. The brownie will look like a regular brownie but there will bubbly sauce popping thru around the edges and sometimes in places in the middle.

Cut and flip over and place on plate or bowl. Top with Ice-cream or whipped cream. If using ice cream top with any excess sauce out of bottom of pan.
 
Love the peeps cake. Was planning on making something else, but it looks amazing!
 
Not necessarily as the main dessert, just something extra for the kids.

I tried Ina Garten's recipe for toasted coconut marshmallows (check the Food Network site for the recipe) and they were easy and really, really good (Much better than commercial marshmallows). I got to thinking that it would be fun to use that recipe to make a giant chocolate marshmallow bunny.

I think you could make her recipe, and just be sure that you spread it in a glass pan with plenty of powdered sugar and coconut on the bottom so that it didn't stick. Let it dry out enough to cut out a big circle for the face and ears. Cover with an easy chocolate ganache (melt chocolate chips in the microwave with a very small amount of cream or milk), then decorate with licorice whips, jelly beans, etc to make a bunny face.

Haven't tried this, but I think it would work.
