Girls trip need help planning

Hi! This is to be a budget birthday trip for myself, my birth mom and my half sisters. I was adopted but found my family, and have been in a relationship with them for over 14 yrs- but due to distance and creating our own lives ,haven't had much time to get to know my sisters. So mom is bringing my sisters for a weekend to my fav place so we can spend sometime to get to know each other as adults.

I plan to book either S/D or CSR/POR -depending on the the discounts avail- AP, FL or Nurse weekend of 11/3. None of us do roller coasters or daring rides so I am pretty set on our one Park being Epcot for that saturday-W & F fest will still be on. I think that most of our time will be in wandering around the resorts- so I also booked a bunch of ADRs to include resort sightseeing. Any recommendations for sights that shouldn't be missed? I have the DDE card so that will help. Any thoughts/suggestions would be greatly appreciated.

Budget minded with Discounts is good, do alot of reseach and watch daily as reservations get cancelled and rooms open. The swan and dolphin are not Disney owned and are really convention hotels, but you can walk or boat to Epcot from there. Boardwalk has great restaurants and shops. POR is my favorite, the grounds are beautiful and very very relaxing and you can take the boat to DTD to go to the world of disney or whatever. They have a nice lounge, the Boatright's restaurant has great food, very homemade like not just pre fab. Coronado Springs, is very spread out, another convention hotel, it's nice but everything is kinda far.

At Epcot, Le Cellier is a great restaurant you would need to make a ADR it can be hard to get into. With the food and wine festival occuring its nice to just try various sample size items and this year they will take the Disney Gift card for payment so you wouldn't have to carry cash. Just get a gift card at the hotel before going. Soarin is a great attraction. Turtle Talk with Crush is very cute, the new Nemo exhibit might be open at living seas.

The Swan and Dolphin are excellent resorts for a girls' weekend. The Mandara Spa is gorgeous and has wonderful treatments, the restaurants are excellent, you have access to all the Boardwalk has to offer (including Jellyrolls), AND you are in walking or boating distance of your favorite themepark. Plus, it has a really nice pool complex. Oh, and Fantasia minigolf (behind the SD) is a blast for adults.
