This will be our first cruise and we thought it may be fun to give a gift from Chicago/Dallas to our stateroom attendant. Do people do this? We were thinking Fannie May chocolate or something so they can enjoy a nice treat the day we leave and be able to share with other cast members.

Any ideas?

As noted, (extra) cash is the best gift. You can also mention them on the comment card (by name), if they've done an exceptional job for you. Those comments are used in handing out extra free time and promotions.

The crew members have limited space onboard, and you can't be sure as to any dietary restrictions/allergies that may not allow them to appreciate what you give them.
 
Great points. We will just set aside some extra cash for them and make sure to use the comment card system. We did that last year at Magic Kingdom for some of the cast members. I didn't know they could get more free time and promotions!
 

We also gave our room Host the handmade lollipops we got at Remy and he seemed very happy with that too.
 
don't forget to give them any books or magazines you may be finished with. even if the cm you give them to doesn't want them they get passed around and other cm's will enjoy them.
 
We add some extra money to the gratuities and give them lots of praise on the comment card. We also always grab a big bag of truffles (or favorite chocolate) before we leave town. The last day/night of the cruise we'll deliver a handful to the CM's who made the trip extra special for us.

On another note, I've heard that CM's like international pre-paid calling cards, but I'm not sure how accurate that is...
 
We did the transatlantic last spring and were part of a candyswap. My daughters wanted to leave something for our room attendant each day ( we did leave extra cash at the end as well ) and left Canadian candy, chocolate coins etc on the pillow each day for him. They had asked first if this was ok and he and they had a ball with it.
 
We dont ever think to leave the hosts chocolate as I would think they could eat all the turndown and gold coin chocolates that they could want?

If the restrictions for crew eating guests' food holds true to the pillow chocolate, they wouldn't touch them. Plus even if they can eat them, candies from different regions far out weights the benefit of unlimited pillow chocolates, IMHO.
