Gift cards at snack carts

For the most part, yes, they do. As long as their credit card machine is working, they can accept gift cards. I've run into a few instances where they could not take credit cards/gift cards right after it rained and everything was still very wet. Aside from that, I've been able to use gift cards to buy snacks in the parks. (Balloons and the penny press machines are always cash only. There might be a few others things that are cash only, but those are the ones that come to mind quickly.)

Yes, we've used Disney Giftcards to buy all kinds of things on the carts, like the Dumbo popcorn buckets. The only time I noticed Gift Cards were not accepted was at a little cart selling beer in CA.
