Gideon's in June?

What is a good strategy for making sure we get int Gideon's the last Wednesday in June? We're only doing one Disney Springs and getting cookies and coffee from there is at the top of my list.

Do they sell the merchandise in store, or is it only online?

Go straight to Gideon's as soon as you get to DS. If you arrive shortly after opening, there may not even be that much of a line. If there is, put your name on the list and then go shop, eat lunch, etc. If you are planning to do other things in DS anyway, the wait is really not that bad. They do have some merch too. Mainly t-shirts, candles, etc.
