Does our KTTW card get us back on the ship?
I've always kept my passport locked up but do you think it's best to bring it with when we're off the ship?
If something crazy happens while we're off the ship it wouldn't do us much good in the safe.

Adults need the government issued picture ID in addition to the KTTW card. Kids just need their KTTW card.

To get off the ship you need your KTTW card.

To return to the ship you need a government-issued photo ID (driver's license; state ID; Passport) to show to gain access to the pier area (security handled by the port); and your KTTW card to get back on the ship (ship's security).

If you need your passport, as in will be delayed in getting back to the ship and will miss departure, if your passport is in the safe in your room, DCL is aware that you are not onboard (they haven't scanned your KTTW card to reboard), and will open your safe to see if you have passports in there. If so, they will deliver them to the port agent shoreside to hold for you to collect from there.

If you are doing a European cruise, you may need your passport to reboard. In Norway we did.
Typically, you don't need to use your passport off the ship. THAT SAID --- there are ports that require passports to be on your person. The Navigator, as well as the Cruise Director at the night time show, will let you know what ports those are the night before.

You'll always be told if you have to have them. We had to have them in, I think, all of the ports on the Northern European cruise (Warnemunde, Copenhagen, Stockholm, St. Petersburg, Helsinki, Talinn) but only in Athens on the Med cruise. Then we had to hand them in after Athens when we visited Turkey and then picked them up after leaving Kusadasi before arriving in Mykonos but didn't need them in Mykonos. That was, apparently, due to some regulation about visiting another country in between visiting Greece again (Athens, Kusadasi, Mykonos) and isn't normally required unless you're doing that particular visitation order. Never taken our passport off in any other port. I just read the Navigator every day as it tells you what you need to do. Otherwise, it stays in our safe.

This is " correct" guidance.

Are you implying that other guidance given was "incorrect"? It was incomplete at worst. People offered their guidance based on their experiences. Others who had different experience due to itinerary then added additional information.
