To answer the above question as to how long it takes to get you passports (and birth certificates) back in the mail...it was approx. 4 weeks and they all go through an office in South Carolina, then through another office (somewhere?) and then back to your home. That, of course, is if there are no snaff-oo's like I have encountered as descibed above with an, "unacceptable" birth certificate. 
Just get it done ASAP....because.....
It is a logistical nightmare for all the adults and kids to converge
It is potentially a long time to get it done before your next adventure
The prices are undoubtedly going up in the near future
It is an expense you want to get out of the way long before your trip because you can then justify more spending on your cruise
