I almost just bit on a barely-used Slingshot AW200 over on another forum, but decided that I still wouldn't be able to beat the amount of lenses and such that I can cram into my old boxy Tamrac.
Anyway, on topic, here's what I took to WDW in January:
Pentax *ist DL and Pentax K1000 cameras.
Pentax 18-55mm, Pentax 50-200mm, Pentax 50mm F1.4, Sigma 28mm F2.8, Zenitar 16mm fisheye, Vivitar 400mm F5.6 (didn't use it once and have since sold it.)
Memory cards, CP filter, star filter, film, memory card reader.
Homemade "Tic-Tac" remote shutter release.
Mini tripod, Clamperpod, Bogen aluminum monopod, Slik Pro carbon fiber tripod, Bogen ball head.
Camera bag and lens pouch.

One day I went lightweight and carried just the K100D, 28-75mm, 10-17mm, and 50mm. I kept one lens on the camera and crammed the other two into a single belt pouch. I also had the card/battery wallet and lens pouch on my belt, and the remote shutter release in my pocket. The tripod was stuck in the bottom of our stroller. Worked pretty well, those three were my key lenses so I was able to survive pretty well with just them.
Oh yeah, I always have my "Spudz" 18% gray lens cloth somewhere, too - either attached directly to the camera (as in the photo) or on the zipper of the memory card wallet - somewhere where it will be immediately available if I need it.
Also, some sort of laptop always comes along, with DVD burning capability. I trust hard drives -
especially laptop hard drives - about as far as I could throw Spaceship Earth, so I don't want to just leave all my pics sitting there!
