How early will the let me choose a FP for FEA? I know WS doesn't open until 11... do they let riders in earlier than this?

I am pretty sure FEA opens at the same time as park opening.

Frozen opens with the park. Some time ago, FPs were only available beginning at 11 a.m., but they've since added them to begin at park opening.
