Fresh Ginger?

I have a new receipe that I want to try that calls for minced fresh ginger. I bought some today so question number one, how do I mince it if I just grated it would that be minced and question two, how do I store the rest of it after I take off what I am going to use
 
I usually break off a piece at a joint that looks like it might be what I need. Then I peel it & throw it in my little electric chopper that I got on Black Friday from Wal-Mart. LOL That's as minced as it gets here.

Because the piece I buy has been broken off of another piece, I don't do anything special to store it. I'll just cut off the brown/dry end when I peel the next segment. It will keep in the beggie drawer in the plastic produce bag for a couple weeks...I don't use a twist tie - just twirl the bag & fold it under.

When I have a recipe that calls for fresh ginger, I simply grate it using a microplane. I like to buy the ginger, cut it into 1-2 inch lengths, peel them and then freeze them. It lasts quite a long time! I like using fresh ginger! I had no idea how intense the flavor would be. I've only used powdered ginger, so the fresh was wonderfully new!
 

Ditto on freezing ginger! I usually peel and slice into "coins" about the size of quarters and keep in a freezer ziplock bag.
 
I love fresh ginger. Thanks for the tip on freezing it. I usually buy more than I need then make crystalized ginger with the rest of it. I love to eat it in big burning chunks. :thumbsup2
