haha whats funny is that my mom grew up in a little tiny hole in the wall town in GA and since my grandparents were adults during the depression they ate alot of vegetable meals because of the cost of meat then...even after the depression was over they still continued to eat like that and did so their entire life...
my mom married and moved away from GA but growing up she would go through this "vegetable meal withdrawel" or something and we would end up eating greens, blackeyed peas, fried squash (which is amazing btw), cornbread and mashed potatoes with onions and mayo...as crazy as it sounds...its sooooooooooooooooo flipping good...you just make mashed potatoes like normal and then add mayo and chopped onion and black pepper...it takes on a completely different taste and is very creamy...you should try it before you scoff at it
