Freezer meals

On December 20th I am having shoulder surgery. I would like to cook several meals and freeze for my family during this time. I need some good recipes that freeze well---not only recipes, but reheating or cooking directions as well.

We eat chicken and ground turkey---occasional beef.

Cilantro Lime Chicken

1 1/2 pounds of chicken breast
juice from 2 limes
1 bunch fresh cilantro, chopped
1 (16 oz) bag frozen corn
2 minced garlic cloves
1/2 red onion, chopped
1 can black beans, drained and rinsed
1 tsp cumin
salt and pepper to taste

Place all ingredients in a resealable gallon-sized freezer bag. Mix together and zip bag closed.
When ready to eat, remove from freezer and thaw in fridge for 24 hours. Cook on LOW for 8 hours (or HIGH for 4 hours).

Serve with tortillas and your favorite toppings (sour cream, guacamole, salsa, and cheese). Or add chicken broth when putting in crockpot and it would make a wonderful soup.

First...good luck with your shoulder. Had surgery on mine in May. Here are some things that are always in my freezer.
Meatloaf
Shepards Pie
Quesadillas (both just cheese and cheese and chicken)
Enchiladas
Chicken corn chowder
Beef Stew
Pulled Pork.
Pasta Sauce
Taco Meat
I can go on forever.......
Use a crockpot as much as possible. Just about anyone can use it. Most of the above can be cooked in it. And any crockpot meal can be put together in advance and then froze. From freezer to crockpot. The items that can't, you might want to use throw away foil pans. No fuss, no muss.

Again, good luck. A word of advice.....Follow the Dr's instructions...when he/she say to do nothing...don't. I didn't listen and am still paying for it.
