Free Dining questions

Okay, we have never done the dining plan or free dining. I am prepared to call tomorrow...I am a DV card holder. Do I just call the Disney reservation line and what time can I call? Also, I want to go the week of Thanksgiving so I understand I need to book Nov 20....but not real sure check out date because I don't know what air fares are yet. So, if I book through to Saturday the 29th and decide later to drop some of my days at the end, will that effect my free dining offer? How does that work? Will I have a problem?

Phones open at 7a EST. Just call the main line. Dropping days later won't be a problem.
