I have 3 FPs booked for AK in the morning of our last day. I really only want two of them. After we do the first two, can we cancel the third and book something in another park? Or do we have to do 3 before we can do that?

My husband left MK early to go watch football one Sunday. He had two more fast passes that he didn't use. We (me, two kids) used our remaining fast passes. Before we went to Epcot, I cancelled my husband's remaining fast passes and grabbed all four of us a fast pass for Spaceship Earth. So cancelling worked fine for us.

We've cancelled and booked at a different park successfully more than once. What you can't do is cancel a third and get another tier 1 attraction in that same park. In that case you have to "use" the third.

You only need to scan in to one fastpass in order to schedule more at a different park. So, once you use the first one at AK, you can then go on then and make ones for the other park. You can even make a second Tier 1 at the different park before using the first 3 at the initial park (assuming one of the ones you use in AK is a Tier 1). You just can't make a second Tier 1 at AK until you use all 3 of the initial fastpasses.

It's explained pretty well in the FP addendum sticky, a couple posts down on the first page.
