When booking your passes how far apart should you schedule them ?

I was think 1 hours, for example :

Space at 10:00
Splash at 11:00
Buzz at 12:00

Any advice ?

That is a minimum. They will be no less than one hour apart with an hour window for each.

But in your example, you start out in Tomorrowland, need to head over to the opposite side of MK to Frontierland before having to return back to Tomorrowland.

Plus--when is lunch?

If you plan on keeping things that close together, two of the three should be in close vicinity that prevents you from taking huge detours.
 
That is what we do...although I would do Space, Buzz, Splash. We tend to schedule them in an order that groups attractions by location.
 
I agree, I would change the order so you're not running back and forth. I'd do Buzz, Space, Splash.

If the OP did Space/Buzz/Splash they could ride Space at 10:50ish, Buzz right at 11:00 and then wait to ride Splash until almost 1:00. That would give them about 90 minutes for lunch.

But they have Splash in between in their original example and that is what I was commenting on.

Your example Is why it is a good idea to put at least 2 of the three that are close together as back to hand FP if you wish to have all passes close together. Then yes, it is perfectly manageable. But not in their original plan.
