I believe Fountain View seems to be closed during evening EMH and I'm looking for somewhere we could sit and have a beverage while we watched the fountain show. Can you see it from Electric Umbrella?

Nope.
However, if you simply buy your drink, you can sit at the Fountain View outdoor tables (if they are not covered/blocked off) or sit on any of the bench-high concrete walls surrounding the Innovention buildings.
