Is there specific days when they do the formal and pirate nights on the seven day cruises ? For example always the third night for formal and fifth for pirates ?

It depends on the Western or Eastern itinerary.
On the Western, Formal night is on Monday night and Pirate night is on Wednesday night after Cozumel.
That is not the case for the Eastern cruise, but I'm not familiar with it's schedule.
