Welcome to the Dis!!! You will pick up a bunch of great tips here! Here are some things my kids love doing at Disney:
* collecting pressed pennies - pay 51 cents for a penny and watch the machine stretch out the penny and squoosh a character into it. It is fun to hunt down the machines (with all different characters), all over the parks, resorts, DTD, restaurants, etc.
* trading pins w/castmembers
* pick out a silly hat or mouse ears and wear it for the trip - if he has a super special favorite character, he may enjoy dressing up as that character

Lego therapy at the Lego building stations at the Lego store in Downtown Disney - great for mom and dad too!
* collecting autographs and pic w/characters.
* the Kidcot funstops in Epcot - color a mask and then collect a "charm" to hang from the mask from each country and earn a little prize when done. It makes a neat souvenier.
* the foodcourt in the Soaring building (Sunshine Food Market?) offers great food, and some nice variety from nuggets and mac n cheese for kids
* we like to leave little gifts overnight from Tinkerbell -- little goodies like swim goggles, sunglasses, a baseball hat, etc. - something that they could use, that we would have purchased for the trip anyway. It is just much more fun to give it to them this way! Also like to "deliver" invitations to character meals -- I do them on the computer before we leave w/clip art and fun fonts and make them from the characters.
* be prepared for interactive fountains -- either avoid if you don't want the wetness, or embrace them and film the whole thing -- and bring a change of clothes for your son!
* it is a ton of fun to do a taste test of soda at Club Cool in Epcot -- this is the only time my kids ever have soda, so they think they are having a super special treat!
* ask to ride up front on the monorail - make sure to carve time in your schedule for this....sometimes you have to wait for a train or two.
* you can get cool tatoos as well as facepainting
