food while driving

my dh & myself drive from chicago to WDW often i was wondering what do you pack in the cooler for your road trip that stores well we often stop for dinner i'm looking for something besides the usual chips..candy..sandwiches:drive:
 
We plan on packing grapes, baby carrots, celery, grape tomatoes, hummus, crackers, string cheese, and mini pitas...we will also pack sandwiches and chips. Since we are driving we are also taking a bunch of snacks for the week and breakfast foods. :)
 
i forgot about string cheese good idea iusually take cheese & cracker packs not easy when you drive
 

We always do a short stop for lunch so we've taken pasta and potato salad. Leftover roast beef. Made quick vegi and cheese plates. The list is endless.
 
Personally we don't pack snacks other then sugarless gum and water. We find we need the meal stops to get the kinks out of the old bones. Believe it or not, we find the major truck stops to have great food especially, the Flying J buffets. :thumbsup2
 
We love cold fried chicken when we do a road trip. Actually, it's the only time we really eat it so that's probably why it tastes so good.
