Food Tasting for Breakfast Buffet?

We are having our tasting later this month and I have to have our Tasting Checklist sent to our wedding planner by May 14. We are looking for some suggestions from those that have already done their tasting or had their wedding.

We are looking for some hors d' oeuvres suggestions as to what you really liked. We are planning on asking for the Antipasto Display because we really want that and would like to see and taste what is included.

We are hoping for the Tinker Bell Brunch and are wondering about the potatoes. They state Oven-roasted yukon gold potatoes - I was wondering if anyone either tried these or had any suggestions for other potatoes.

The chicken offered in the brunch is Chicken with Granny Smith Apples, roasted fennel and fig jus - anyone have this or does anyone have any suggestions for another chicken dish.

Omelets made to order are included and I don't know if I should put this down to try.

The pasta they offer is penne w/artichoke cream and vegetables. Any other suggestion for a different pasta.

The brunch also have made to order crepes and while this sounds great I would love to serve Mickey waffles. Anyone have the crepes and if so how were they?

We were thinking of adding a fish or meat dish (does this sound like too much food for our guests). And I would love to try the Cinderella Slipper Desert.

I would appreciate any recommendations from anyone.

I had a surprise 21st birthday party for my daughter last June at the BET Soundstage in Pleasure Island (great venue for a private party by the way). I used the Lady and the Tramp rehearsal dinner menu and everyone (83 people) raved about all the food --especially the Parmesan chicken with mushroom cream sauce. My daughter has said that she doesn't care what menu we choose for the wedding reception as long as we have that same chicken.
 
I have heard good things about that chicken dish. I will have to add this to our menu tasting.
