Claire, you'll have to be more specific. What kind of dinner do you want? Sit-down? Counter service? Hot dog cart?

If it's sit down places you want for dinner, there are several options:

Crystal Palace is a great place to wind down from the parks and has a beautiful setting. It is also a character buffet with Winnie the Pooh and friends.

Liberty Town Tavern is supposed to be good for dinner and is also a character meal with Goofy, Mickey and Co. dressed as Colonials. Food is a Turkey feast and brought to you.

For non character meals there's Cinderella's Castle (has quite a following and supposed to be good food), Plaza Restaurant (good sandwich fare), Tony's (seems to be hit or miss here), and maybe another one but I can't remember...
These probably all need a PS.

For counter service (but still a sit down feel) there is my favorite, Columbia Harbor House (fish, soups, chicken and great atmosphere), Pecos Bills (hamburgers, etc. and a great fixings bar), Tomorrowland Terrace ( I think it has some out of this world entertainment along with pretty good food), Pinnochio Village Haus ( burgers, salads ect. and a cute theming), and various other places like Casey's (great hotdogs).

There really is a giant assortment of places to eat dinner in MK! I'll bet others can give even more info depending upon what type of dinner you are looking for.

I really liked the fish place in Liberty Square. It was really good! I'm not sure if it's a good choice for dinner, though. The name of this place slips my mind right now.

Jaletu2000, you pretty much covered everything. My personal favorite are Crystal Palace, abuffet with the Pooh characters and The Plaza Restaurants, great sandwiches, soup and ice cream.
