Food Help!

I'm supposed to cook dinner for 10-12 people on Monday evening and I have no idea what to make! I've been in such a food rut these days and am stumped.

Got any suggestions for a good meal that isn't too complicated to make (I have to work in the morning)?

There are a few constraints: I don't eat beef or pork. The meal could include either but has to be able to be made with chicken as well.

One of the girls is allergic to spinach so we can't have any of that.

Chicken Parmigiana? You could make up the chicken and sauce ahead of time, then all you have to do is boil the pasta and melt the cheese on top
 
Lasagna or stuffed shells made with ground turkey. You could prep ahead and make a salad and pick up fresh bread, too.
 
Both of those sound great!

I had thought of lasagna but not of including the ground turkey. Thank you so much. Like I said, I've been in a rut and my brain hasn't been working when it comes to food.
 

Jenny-O makes a great Italian seasoned ground turkey that I use for lasagna and pasta sauce. You can also find really good meatballs and Italian sausage made with turkey.

One of my favorites for a crowd is to get some frozen cheese shells, put them in a large baking dish with meatballs and italian sausage, cover it with a couple of jars of sauce, mozzerella cheese, cover and bake for an hour or so.

It all comes out juicy, cheesy and delicious! Some good fresh bread and a salad and you are GTG!

Then a nice chicken parmigiana, with pasta on the side.
If you want to change it up a bit, do the side pasta with a pink sauce or a simple garlic & oil.
For dessert, chocolate & peanut butter pie.

Let me know what time I should be there. ;)

We're supposed to start around 6:00, but with this group that means we'll get going after 6:30. So come any time, but be sure to bring that chocolate peanut butter pie! :)
 
Chicken Marbella from the Silver Palatte Cookbook. Just google Chicken Marbella and the recipe should come up. Don't be afraid of the weird combination of ingredients. Everytime I make this I get raves.

I like the Italian theme. How about a Tiramisu recipe? I saw one that used Jello pudding and Cool Whip- you could probably find it on Kraft. You could also buy spumoni and dust it with powdered sugar. It you have wine drinkers, I would recommend a Moscato. I know reds are supposed to go with red sauced dishes, but Moscato is light and appeals to a wide range of people-very drinkable. Hmmm...can I join you?:rotfl2:
 
How about a big pot of Gumbo, you could even make it a day ahead and just warm it up and cook the rice that day.
 
Chicken tortellini

Frozen tort's (I like the 7 cheese from Costco) - 1 double pack should feed your group just fine.

Brown up some turkey italian sausage and some boneless chicken to add.

Classico 4 Cheese Alfredo sauce - 4 jars

Boil the torts for 8 minutes - add to the cooked meat, top off with the sauce. stir and let sit about 10 minutes.

Add salad and french bread - easy, yummy, filling and none of the no-no foods.
 
I hate these food threads because I gain weight just reading through them! If I had to cook for a dozen people I would keep it simple so even I couldn't mess it up. Oven roasted chicken, mashed taters mixed with sour cream, and steamed veggies. Carrots in one dish and maybe brocoli and cauliflower in cheese sauce. I'm just not very adventurous with food....
 
I was thinking some sort of lasagna dish too... but I've never had it without beef.. LOL

But..I'm not a cook, so I'm just looking for yummy ideas popcorn::
 
There are some very good recipes for chicken lasagna (white sauce, not tomato based).

We like the Parma Rosa sauce (packet to mix with milk) produced by Knorr. We have used that in a casserole with chicken and different pastas.
 
Chicken Francese, linguine or rice, bread and salad.

I have made this for several parties and its great and you can make the chicken ahead of time.
