we will be staying at pop but can we eat at any disney resort would like to try some out if so which ones should we try

Boma at AKL (plus you can wander around the resort); O'Hannas at Poly (book 2 Hours before MK fireworks, go to the Poly beach and watch); Whispering Canyon Cafe at WL (a little different, not for everyone but the food is good).

Yes you can eat at any Disney resort restaurant you would like to. It is fun to see other resorts too.
Who is in your party and what are their ages? Are you on the Dining Plan? Are you on a budget? Are you looking for Table Service or Quick Service meals? Answers to these questions will help us to point you in the right direction.
Some of my favorite resort restaurants are:
'OHana at the Poly is great fun for a family with children. It is a nice room with a beautiful view to the Castle, there are singing and games for the kids and the food is good and all you care to eat.
We like Kona at the Poly for dinner. It is a nice atmosphere and the food is very good. Check out the grounds at the Poly while you are there. It is a beautiful resort. And as already suggested plan your ADR so that you can finish and watch Wishes from the Poly beach after dinner. It is beautiful.
For an adult meal we love Jiko at the AKL. It is expensive though and more adult focused than most WDW restaurants. It is a beautiful room with great ambience. The service is attentive but not hovering. And the Food is delicious and it has a great South Africian focused Wine list.
Cape May Cafe at the Beach Club has an evening Clam Bake which is very good. They have a breakfast buffet with the characters too.
