I just got to wondering if this was something I could do in my nice new convection oven. Did some googling. I could IF my oven had the ability to go to about 100 degrees. Sadly, the lowest the digital setting allows is 170 degrees for regular oven, and 325 degrees for convection oven.
I was trying to avoid another gadget in the kitchen.
Does your oven have a button for proofing bread? That is 100 degrees.

Just a note about jerky. If you want the true kind of jerky that is kind of stringy and chewy, you have to slice the meat WITH the grain. Flank steak is a large flat piece of meat with the grain running the length of the meat. So you just slice that lengthwise and cut into appropriate widths. Delicious.
Is anyone leery of dehydrating poultry at such a low temperature? I just can't bring myself to try turkey jerky..
