food carts

Is there anyplace that lists their hours of operation? Do they always open at the same time, or do they open earlier during holiday weeks?

I'm mostly concerned with the Animal Kingdom. There are so few real restaurants there that we do a lot of our eating from the food carts. My plan is to be at the park at open, but how long will it be before we can grab any food, without having to do a table service meal?

1) Food carts do not have firm schedules.
2) The carts open based upon anticipated attendance.
