Food Allergies + recipes

Part of our students work for GCSE Food technology this year is catering for food allergies, I wondered if anyone out there had any information that would be of help to them or any recipes that you use so that the students can get some idea of substitute ingredients - thank you
 
Can't really with help with recipes per se, only that my DH has food intolerances to 'E' numbers so everything I cook is normally home made.

With this in mind, I thought it would be useful to mention that it's amazing how different brands of the 'same' foods can vary - just for their info - like, for example, gravy granules. One brand is ok to use, the other full of nasty Es:scared1: His intolerance gives him heart palpitations and other unpleasant side effects so we really do have to very carefully monitor everything that is bought.

Interestingly enough, he's never had a problem when eating out in the States:)

I have a client who is allergic to eggs so I use Egg Replacer (1 teaspoon equals 1 egg and it's mixed with water and I just use it in the cakes exactly the same way as an egg.)

I also have clientsd who are allergic to cows milk and therefore cannot have butter so I use the Pure range of sunflower oils as their replacement.

I also have clients who are gluten intolerant and so I use the various ranges of gluten free flours for their cakes.

Not got any recipes for you sorry, My eldest DD is allergic to Tree Nuts and Kiwi fruit, so just do our upmost to steer her away from these ingredients, which isn't always easy as most things nowadays say may contain nuts:headache: but at long last we now think she's grown out of her egg allergy!!, it's only taken nearly 9yrs!!, My husband use to make her lovely egg free pancakes....
 
hey i teach food technology too!!
gluten free pasta, bread, bisuits are good, if you havent tried them.
lactose free alternatives are good too, we often do taste tasting of both and the kids cant tell the difference.
i know loads of really useless stuff - pm me if i can be of any help
