Despite being seasoned visitors to Orlando we have never flown indirect, but will be next year as its our first time in school holidays. We will be travelling with a 5 and a 2.5 year old.

We usually travel with our own car seats and a pushchair since we've been going with the kids, for what I can see this is something only UK (or European based) airlines offer and if I book with a US carrier it seems to suggest a car seat or pushchair not both. Does anyone know if this is the case? Also if a booked as code share flight i.e. Virgin but Delta is carrier do I have Virgin's child baggage allowance?

I can't even book flights yet, but I like to know what I'm up against!

you need to check this with each individual airline.

US DOT Regulation 14 CFR 399.87 (First Marketing Carrier)
In the case of code-share flights that form part of an itinerary whose ultimate ticketed origin or destination is a US point, US and foreign carriers must apply the baggage allowances and fees of the marketing carrier throughout the itinerary to the extent that they differ from those of any operating carrier.

if you buy a Virgin Ticket (first flight number starts with VS) you get the Virgin rules on all flights including Delta operated flights. If first flight number starts with DL you get Delta rules throughout your itinerary

you need to have this confirmed by the airline though
 
you can take both a car seat and a pushchair as baggage on delta.
it's not either or.
and if you're ever in doubt, just take it to the gate where they'll force you to gate check it for free.
If you pay attention at gates, you'll notice americans get around baggage allowances by taking bags to the gate for (free) gate checking.
