We loved DC and there is plenty to do, birds, rays and the new sea venture looks amazing. We went in 2006 and I really want to go back this year but DH is not keen.
There are lots of other speculation experiences offered at the disney parks allears.net have a list of them. They do cost extra but being disney they are pretty special.
Have you thought about a trip to Kennedy space centre? We did it with the full package including the dine with an astronaut and the behind the scenes tour. Really interesting but if your not interested in space it's a long way to go (no pun intended its an early pick up and a long drive out) We did a tour through floridatix which included the bs there and back.
I totally agree with getting an early reservation for crystal palace to get the empty park photos, one of my favourite photos is one of an empty fantasy land.
Shuttle buses can as a PP said be restrictive and we found this when staying offsite. We had a few times where we cut it close to missing one as we wanted to stay for fireworks and it took longer to get back to the pick up point. For magic kingdom the shuttle buses use what's called the ticket and transportation centre which is a distance from the magic kingdom.
Shopping wise unless you have a lot of spare cash I would skip millennia mall as most of the stores are pretty pricey.
The other not to miss thing if you are there which judging by your dates would be the Halloween party and magic kingdom, great fun amazing parade and fireworks that are spectacular, trick or treating and some rare characters like all the seven dwarfs. It's an extra ticket that you would need to buy and the party starts at 7pm and runs until midnight. Almost all the rides are open and the lines generally are shorter.
