Flex/non park day ideas?

We like Disney Springs and also riding the monorail to investigate different resorts, etc. Have been/stayed at Pop, CSR, CBR, recommend some cool things to do or must hit restaurants during our flex/non park day! Never been to Boardwalk, Yacht Club, Copper Creek, etc. I know we'll definitely hit the Skyliner this time, maybe I'll take bus from Coronado to Epcot then grab a long Skyliner ride?

If you bus from Coronado to Epcot, you’ll need park admission to walk through Epcot and out the IG to board the Skyliner. So it’s better to bus from CSR to DHS and board the Skyliner at DHS. Ride from there to CBR, where you have to get off, and you have the option to explore CBR for a bit, ride Skyliner to/from Epcot (which allows visits to Riviera, BWV, Y&B), ride Skyliner to/from AoA/Pop and visit them, or all of the above! If you want to play mini golf, you can catch the boat from Epcot to Swan/Dolphin and walk from there to Fantasia golf, assuming it’s open when you’re there.
