OK it is our first trip to US/IA for me , husband, daughter and niece (both 11) what are the not to miss things in the parks?
Neither kids will ride big coasters.

Don't miss rides for our family (me, DH48 and DS9) are:

At Universal:

ET, Men in Black, Earthquake, Back to the Future (although this is a rough, simulator ride its brilliant)

At IOA:

Do not miss Spiderman under any circumstances! When you arrive at the park go straight to it and get a fastpass for later in the day. Jurassic Park is great (you might get a little wet at the end).

ET was our DD's favourite ride, also spiderman and all the rides at Suess Landing (especially cat in the hat). One daughter was scared by the drop on Jurassic park so be warned.
 
MY DD who was 7 and DS who was 13 LOVED Spiderman. It got to the point where they wanted to ride it over and over again! My DD is the younger one but she is a thrill seaker and she couldnt get enough of Back to the Future. Cat in the Hat was great fun and they both enjoyed that.

I think it all depends on the child. I'd suggest visiting the USF web site before you go and play some of the short videos for the kids that let you experience some of the rides. I found that helped a lot in planning what attractions we really wanted to do. It also helps younger kids to know what to expect.
 

I literally Live at IOA...IM not to sure about US...BUT at IOA:

1)Spiderman is a must do
2)If They Like Roller coasters Hulk and Deuling Dragons. Hulk has a 0-40 mph in 2 seconds...so be warned
3) Popye is a fun water ride ....the animatronics in that ride are great! Dudley Do right has an EXTREMLY steep drop on the final drop....my and my two friends yelled our heads off on the final drop but we rode it like 5 times after... Jurrasic Park is fun...but another steep drop...you will get SOAKED on these water rides
4) If they are thrill seekers and have enough courage....take them on DR.Doom THAT is a fun and smooth ride
