First time taking kids to Disney. Is it worth it to wait to meet the characters or should I try to find a character dinner instead?
 
It really depends on your kids and which characters they want to see. And if you plan your day and FP+ appropriately, you can meet many characters without much of a wait. That said, character meals can be a great experience!
 
I agree with the above poster. We were only going for 2 days, so I asked the kids who they HAD to meet, and explained that any other ones we saw we may or may not be able to stop for. However, I did book 2 character meals - Akershus for princesses and Chef Mickey's for the fab 5 - so I was guaranteed some interaction. We were able to meet many others as we wandered, though - between 'attraction' meets (like Pete's Silly Sideshow and Tink at Town Hall) and 'park' meets (like Gaston, Chip & Dale, Fairy Godmother). But we also just stopped and watched some for a minute (Alice, Pluto, etc). If your child wants to meet characters, I'd figure out who is at which meals and maybe book one or two (as budget allows) so you know they will get that. Then maybe plan for 1 more during each day, and all the others you can do will be a bonus.
