First time DCL cruiser with online reservation/check in questions

I swear I've searched this forum and elsewhere for what I think are some pretty basic questions, but so far I haven't had much luck. My family of four is booked on the Fantasy 7-day Western Caribbean beginning 3/5/16, so our 75 day window opens Monday (at 12:00 a.m. EST apparently). I'm trying to figure out:

1. Do I have to go through the "my online check in" process and provide all that information prior to booking "my cruise activities?" Or can I simply log in at 12:00 a.m. EST and start booking cruise activities?

2. What are the rough odds of being able to book the following at the 75-day window if I do it right at midnight?

BBB appointment for my daughter?
Remy/Palo reservations?
Shore Excursions? (Fury Catamaran Sail, Snorkel & Beach Party in Cozumel, Shipwreck Snuba in Grand Cayman and the Watercraft Ski Adventure in CC)

1. You can do either the online check in or excursion bookings once your window opens. Whatever is more important to you to "do first". One note (just clarification for others) you must be paid in full to book excursions, etc. You do not have to be paid in full to do your online checkin.

2. Can't give you odds, but we were able to book everything we wanted on our first cruise. And, recent (last minute bookings) cruises we've done, we've never not been able to book what we want. That being said, it's possible that Palo and Remy may be "sold out", but that's the reservations available pre-cruise. DCL does hold back reservations for booking onboard for both those locations. If you are unable to book either (or any thing else you want) keep checking back - people do cancel reservations up until 3 days prior. Check the Navigator you get in the terminal for Palo/Remy dining changes, if nothing comes through before your cruise, and head there as soon as you are onboard.

For those who are curious about what's available at the 75-day mark, I logged in at 12:00 a.m. EST this morning and basically got everything I wanted:

Palo and Remy each on the day I wanted and at reasonable times (7 & 7:10 p.m.)
Our first choice port excursions in Cozumel, Grand Cayman and CC at reasonable times
A 10:45 to 11 a.m. boarding time. (Almost every time was available.)

Two issues:

1) it was really unclear when booking the double watercraft (jet skis) for CC whether I should include all four of us or just the two adults in order to reserve a pair of double rider watercraft. For whatever reason, the site listed all four of us as eligible, but would not book the reservation if all four of us were checked. I therefore booked it with just my wife and I checked and called Disney today to clarify. Apparently I had only booked one jet ski and it took them more than 20 minutes to figure out how to make it 2. Even weirder, they said when I view the reservation that it might not show to jet skis, but "they're in there."

2) I still don't know if I can see the two jet skis because the site has been down for the last few hours and won't let you retrieve reservations. Glad I stayed up last night!
 
Yup, at the 75 day mark, you should get everything you want. CC can log in further out, but they specifically hold spaces back for new cruisers and even hold some spots back for right on the ship as well.
 

The only things that was not available for me as a first time DCL cruiser at 12:01 am at the 75 day mark were the cabanas on Castaway Cay. I actually booked BBB several days later and had my choice of times.

For Palo/Remy reservations this is correct. For actual excursions/cabanas it's first come first served, so some of those could sell out before a first time cruise has access.
