Congratulations! 
How about eating an early dinner at Boatwright's over at Riverside before you head to EPCOT? It's a very short walk from POFQ (5 min), and the food there was very good.
Oh, and book an evening carriage ride through the sister resorts...very romantic! Book ahead, though, they are popular!
