First day at DW...headed to HS help?

We are going the end of this month and it will be me, DH, and our 6, 3, and 2 year olds. We were originally going to start at Epcot, but thanks to my husband suddenly having an opinion 3 weeks out (eye roll here) and wanting more time on our water park day, we are now going to start at HS.
We will be there on a Friday with evening EMH. We are not doing any SW stuff except maybe Star Tours as we have a different day we are headed there early for JTA. The only "must" on our schedule is Indiana Jones at 6. The plan is to sleep in (we are getting in late the night before, do some pool time, have naps, and then hopefully be in the parks around 5ish. We are definitely doing the SW fireworks show and are planning to have a snack and park out about 7 for that.
So...HS has been my least favorite park to plan since we are newbies. I have no idea if my younger two will like the characters (they hate the ones around here like Chuck E Cheese) and so don't really want to start with the Disney Jr. show or something with scarier elements like the little mermaid. My 6 year old is star wars obsessed, but I'm worried about starting him on something like Star Tours and then getting motion sickness as I can't ride those types of rides (do kids usually have trouble or am I overthinking it?)
Obviously TSMM would be a good one but right now I can only get FP+ for 6 or later.

So my question is...for first timers, first rides, first park coming later in the day, do you have a suggested touring plan?
Do kids generally have issues with motion sickness on Star Tours?
I know the best places to go for the SW fireworks, but is there a place within there particularly where it won't be absolutely crazy trying to keep the kids from getting smashed and/or not being able to see? (TP has a crowd level 8 that day).
Any other help would be appreciated!
 
I guess I should say, we could do the Star Wars stuff that day and then save some of the questionables for later, I hadn't thought of that.
