Fireworks videos and DSLRs (oh my!)

I occasionally frequent Las Vegas and take video of the strip at night with my Canon T4i and the EFS 10-22. For "static" things like buildings lit up at night your light exposure is going to be relatively constant and I can adjust accordingly.

But when recording things like the Bellagio's fountain shows at night things get a little tricky - If you haven't seen this - Each fountain jet has a light underneath it that lights up if it fires and when you get a lot of jets firing at once you get a LOT of light. The effect is not unlike fireworks. When shooting the fountain shows I discovered that if I stopped down 1 stop on my T4i then I struck a good balance between normal night exposure and the fountain jets as the auto-light balancer would, I think, over expose the normal night scene and then REALLY over expose the jets as they fired.

(What's this haveta do with Disney?! yeah, yeah, I'm gettin' to that!)
I used this same strategy with Wishes and still ended up with a lot of noise and the camera kept trying to brighten the scene (I think because the ambient light was "lower" than with the Bellagio fountains) so that I got great exposure of all the firework cloud trails. I ran the video through Lightroom 5 and crunched the blacks and juiced the colors and got something that looks pretty decent but the castle turned into a colorful blob (especially when pink or blue) and some of the fireworks lost their oomph.

I'm going out for Christmas and upgrading to a 6D (specifically for this trip!) and wanna shoot the holiday fireworks and wanna try to figure out how to get a better video. The 6D will help with that but I'm wondering what other settings I could use? Tips? (I'll be shooting with a 16-36 f2.8 II)

I was watching the DISBoards fireworks videos (the holiday one that just posted) and I'm guessing they're using a DSLR too? Anybody know what they shoot with and/or what settings?
