I shared these on my PTR but wanted to share here as well and thank the people who work so hard to feed my Disney addiction! 
Keith (Maize&Blue) designed the cover of DD's autograph book with Selena Gomez. Victoria (LittleMissMagic) designed DS's Phineas and Ferb cover. The rest, which includes passport pages and cover art as well as autograph pages, were designed by Natalie (donatalie). Thanks so much guys!!
I debated a lot about the best way to put the books together. I wanted them to be: cute, able to use the covers they selected, convienent to use, able to add pics of the kids with characters after we get back, relatively easy to make, cost effecient and I also really didn't want a lot of empty pages (I was a little OCD about this last one
).
I finally decided to get matte finished 4x6 prints from Snapfish and put them in a clear plastic 'brag book' style photo album. The album holds 36 photos plus has a pocket to slip your own cover in. I chose the characters I knew we would see (from character meals) the ones we are planning to have time to wait in line to see, and a few others that are highly probable. The rest of the pages are generic pages to be used with any character but still cute.
I decided to go with this because I was able to fill the book with pages but can remove any empty ones when we get home. I'll then choose some pics of the kids with characters to fill in the empty spaces in the book.
I picked up the 4x6 albums at K-mart and have seen them at other places as well, pretty much anywhere that sells photo albums.

I also put a butterfly clip with each one so when we are waiting to meet characters we can slip the page out and clip it to the front of the book to make it easier for the characters to sign and so we wouldn't risk losing the page due to awkward costumes not being able to grip well.
We also wanted passports that were cute, econmical, and easy. I ended up using the 2x3 mini book on Snapfish. It has a personalized cover and 24 pages which was perfect for a title page, 2 pages per country (one for stamps, one for CMs to write on) and a page in back with our resort info in case we should lose one. All of the designs in the passports are Natalie's.
The cover required a small pic since the mini book will only do a small thumbnail in the center, not the entire cover.

Now all I need is a retractable Sharpie and we'll be good to go!
ETA: I forgot to mention that with Snapfish's great prices and a coupon code for free shipping I finished 2 autograph books and 2 passports for about $20- pretty great deal!
