You guys are GREAT! I just went all the way back to read,and you guys are good at sticking to a budget and eating healthy! I can't keep track now because of the summer and my DD's are away at their grandparents ( I work 12 hr shifts,and am now on the night one,and DH works 9-5) but,I will try this calculating business when school starts and I'm back to day shift hours. It's like a challange for me now. I'm really impressed with you guys! It's fun to read the different food idea's you all feed your family and gives me ideas.Thank you!

Not every day can be budget conscious. You've got to have some splurges now and then.:thumbsup2
 
I was experimenting with this idea and it really works and great for a hot summer afternoon for the kids.

I been keeping the yogurt containers i'm teaching the kids to recycle reuse things and i couldn't figure out what to do with them so i took what was left of some koolaid in a container so i could make new for the kids and froze it with the lid on and my son thought it was yogurt instead it was cherry koolaid in a frozen block he scraped it with a spoon outside and was eating it like an icee and i really doubt this cost me more then 5 cents to make. I put the container in the dishwasher and i'll redo later.

Yesturday was first day of summer vacation and we decided today we have a pinic in the park with pizza and soda. for 5 bucks for a pizza i think i could splurge one day.

how do you make the chicken? I have an entire bag of spinach to use. also the salid fried with soy sauce and garlic was a hit with dh and I and 3 kids:love: dd 14 will not eat garlic because she might smell:eek: well to bad more for us:banana:

I'm glad you liked it.

Here's my recipe. I serves 4, but I usually double it and make 8. We eat them cold the next day.

bunch of spinach (you can use frozen or bagged)
1 tsp. lemon zest
2 tsp. butter, softened
2 TBS minced parsley (I have used dried basil, fresh dill, fresh cilantro-use whatever herbs you have. it will work)
4 boneless, skinless chicken breast halves
1/2 cup bread crumbs (you can use homemade, just make sure they are seasoned nicely)
toothpicks

wash spinach and wilt in a pan (using just the water clinging to the leaves) If using frozen, just squeeze out excess water and go to next step.
Combine all ingredients except chicken and crumbs. Pound chicken breasts with mallet. spoon 1/4 spinach mixture onto each breast. roll up chicken breasts. secure with toothpick. roll in breadcrumbs bake in shallow pan for 35-40 miniutes until chicken is opaque.

This has less than 300 calories per serving! It sure doesn't taste like it though.

ETA: I forgot. you do have to salt and pepper the spinach mixture, breadcrumbs and breasts.

We have drank only water so far today.

Each kid bought a soda with their own money, when we went for a walk ealier today, I won't count that in the total, since it was their money, and allowance is seperate from food budget. They will probably drink milk and/or juice at some point, but, that is served on demand. :)

My 8yr old won't eat meat he rather have fruits and veggies and bread and butter. Won't even drink milk unless i put it in his cereal. He will eat ham or tuna sandwiches on occasion. Doc told me that's ok because he usually eats peanut butter daily that has more protien and iron then meat. The oldest loves meat but will always ask for seconds on potato's and bread. If his brother doesn't eat his chicken or fish he will eat it sometimes or take it to lunch the next day to school. We at dinner always have plenty of salad or homemade soup in the winter and veggies with dinner. The kids love egg drop soup and bread for dinner or corn chowder in the winter time for dinner, and in the summer they love there salads we came up with a spinach salad they will actually eat. Spinach, strawberries, blackberries (when in season because i have them all over the yard) dried cherries and tomato slices and little cider vinegar and oil. They love this. I also make some spinach fettuccine and mix this in the salad with little cheese grated on top and throw in a can of garbanzo beans and they eat this up. and it usually costs me 2.50 for 8 people.

4 cups chicken broth can be homemade can boullion
1/4 grated fresh ginger
3 Tsp soysauce
1/2 cup chopped mushroom
2 eggs whipped

put everything in a pot (except the Eggs) Bring to a boil and mix in eggs slowly move around with a skewer for 1min turn off pot and serve.
You can you powdered ginger also and skip the mushrooms i use can one's at .25 cents a can and my broth is always home made or boullion from the dollar store so it's not that expensive.
 
Today is easy:

Breakfast and Lunch at DD8's school (sponsored by PTA)
Snacks: we are stuffed. they had cherries strawberries, chocolate cake, blueberries, oatmeal, cereals, baked ziti, macaroni and cheese, fish sticks, corn, 3 types of salad. juice, iced tea, different cheeses. I don't think my kids will snack today.
Dinner: leftover chicken from yesterday, mashed potato, salad $2

TOTAL: $2

Now that's cheap!
 
here is a quick meal to wip out the freezer
buy a whole chicken and cook it. take the meat (your familys serving size0 freeses it. then someday take it out and heat it up with b-b-q sauce. my kids love it:woohoo: I usually serve it it on a bun (like sloppy joes ). also I usually can make 2-3 meals out of a whole chicken. I also freese the chicken for broc and chicken fetachine alfrado. :cheer2:

sorry my computer dose not have office anymore..I know I have a spelling prob. I have a LD and that is part of it. I have struggled my whole life.. Thanks so much for your support.. I will try to have dh install my office.. :teacher:
