The Hubs and I fell in love with the Gumbo from the Blue Bayou at Disenyland. We now make double batches of it, freeze it, and have it for dinner at least once a week since our trip in April. SOO SOOO yummy!!!

The Coconut Curried Chicken Soup from Boma is incredible and we have made it several times. Occasionally we will thicken it and put it over Jasmine rice or Thai noodles.
Ah, you've caught me... by "we" I really mean "my wife"... she's definitely the cook in the family. I think it is a butter/flour mix and maybe some peanut butter to keep with the thai flavors?
