Favorite "spring time" recipe?

I'll go first!

I got this recipe off of DISer Mamu years ago here on the Recipe Board. People rave over it, and it's so easy to make! It's become an easter tradition in my family to serve this as dessert on Easter Sunday.

1 lb. of Ricotta cheese (I use the 15 oz. container)
4 eggs
1/2 cup of sugar
1 1/2 tsp. vanilla
1/2 pt. heavy cream (not whipped cream)
1 cup milk

Mix all together in mixing bowl and pour into unbaked pie shells. I then sprinkle with cinnamon.

Bake for 1 hour in a 350 degree oven.

May be topped with strawberries and served either warm or cold, I prefer mine cold. :)
 
:confused3 I admit I'm not much of a cook - what does this recipe make? Is it like a vanilla pudding or cheescake pie?
 
Sandy, it's an Italian cheese pie similar to a cheesecake, only it uses Ricotta cheese instead of cream cheese.

It's not overly sweet and it's nice and light.
 
I've always called the Ricotta Pie. Very much a Easter Staple in my family.
 

Deviled Eggs with horseradish. I make these once a year on Easter. The other tradition is homemade coconut cream pie - again once a year on Easter. Since DH had to work this year I almost decided against these traditional items. However, the look of dismay on faces Friday and Saturday when I mentioned I might forget the traditional Easter dinner was more than I could bear so I forged ahead.

(P.S. We didn't have any Easter dinner last year as we were holding the final vigil for my mom so I guess I should have known this one would be important to the kids especially. :guilty: )
