Magic Kingdom: Cosmic Ray's Starlight Cafe.

Epcot: Electric Umbrella.

Hollywood Studios: ABC Commissary.

Animal Kingdom: Flame Tree Barbecue & Pizzafari.

Downtown Disney Marketplace: Earl of Sandwich.

Contemporary: Contempo Cafe.

Grand Floridian: Gasparilla's Grill & Games.

MK: Pecos Bill (I can make "Figaro fries" just asking for a side of fries and adding stuff from the fixin's bar!)

EPCOT: Sunshine Seasons has a lot of varieties.. Japan also is awesome for healthy options

Studios: Toy Story Pizza Planet (there's not a lot of choice at this park, IMO)

DAK: Tusker House (when it was a CS restaurant, anyway..)

Resort: Pepper Market (Coronado Springs).. I must admit I haven't been everywhere but there is sooo much here for everyone, I never worry!

DTD: Earl of Sandwich (this is my MUST GO TO each and every time.. the Earl Grey Lemonade is THE BEST!!!)
