Favorite Park/Resort Tours & Experiences

I'm planning our 10th Wedding Anniversary trip for Sept. and am interested in some of the behind the scenes tours at WDW or any other special experiences. I'm curious to hear from those that have done these sorts of activities at any of the parks/resorts/etc. What did you love & would recommend? What was disappointing & you wouldn't recommend?

Some background: Not traveling with kids. We are seasoned Disney Vets and will be staying at AKL. Any info is appreciated - I'm just looking to add some magic to our trip with some cool stuff!
