Favorite fine dining restaurant in WDW?

I agree (mostly) with Pakey--for your group for sure Narcossee's and California Grill.
Then maybe Jiko because the animals can also be viewed before or after dinner.
 
Signature dining is just more our style. The volume/type of food is less important, and the experience is more important ... we're just not big into the food itself.

I have to admit, this sentence has me perplexed. If the food is not the sine qua non of the experience, then why worry about whcih signature restaurant to go to? If the "experience" is more of what you are after, then, since you are at WDW, why not pick something that is more quintessentially Disney without worrying about the menu. I certainly wouldn't want to drop a couple hundred dollars at California Grill, Citricos, bluezoo, Flying Fish, Yachtsman's, Narcoosee's, etc. if food was a secondary consideration. If you take food out of the equation and factor in mostly "experience", I would focus on places like 50's Prime Time, or almost any of the Epcot TS places. If what you mean by "signature dining is more" your style that you want to avoid buffets and character meals (and trust me, I am with you 100% there), then there are still many options for you that are not "Signature" restaurants (which is a term of art in Disney-speak and is not a synonym for "sit down meal".) "Signature" dining at WDW denotes a special level of restaurant where food is supposed to be the center of attention, and you pay accordingly. Frankly, from your posts, I am not certain that this is what you are really after. But maybe. Just not sure.
 
Number one is definately La Hacienda de San Angel - Mexico - World Showcase. We've eaten here on each of our trips. The food is wonderful and we love the ambiance - a beautiful Mexican village.

Number two is Nine Dragons - China - World Showcase. The food was great and the waiter made each of our kids-then DD-9 and DS-6 "trainer chopsticks". The kids had a great time trying to use them!

Number three would have to be Raglan Road Irish Pub in Downtown Disney. Great food, awesome music and a wonderful Irish dancer for a dinner show.
 
california grill is great- good food and the location makes it a fun and interesting spot to eat.

2. Teppan Edo in Japan at Epcot
3. Ohana at the Polynesian

(shocked at the Le Cellier replies...but everyone likes different things!!)

This is an easy one..

1 - Bistro de Paris (by a landslide)
2 - Artist Point
3 - Citricos

We base our favorites on a combination of excellent service, great wine list, interesting and unique entrees and overall atmosphere.
