Need to make an appetizer for a small group of ladies tonight, looking for inspiration...and relatively easy!

Thanks for any ideas!
 
Baked brie en croute...easier than it sounds and very yummy!

There are lots of variations, but what I do is:

small or large brie wheel, depending on how many people
slice in half (the long way) and put apricot preserves and walnut in the middle
replace the top half
open a package of crescent rolls (if you can get the 'recipe' ones with no perfs that works best)
place the rolls in one sheet in a greased dish that has sides and is large enough to accomodate the cheese plus crescent rolls when puffed
put the brie in the center, bring the corners up, folding over excess and seal
flip the whole thing over
brush with an egg wash
bake at time and temp indicated on the crescent roll package

serve with crackers and apple slices
 
Pineapple dip:

A package of Cream Cheese & a small can of crushed pineapple drained & mix both. Serve it cold. We eat it with crackers, usually triscuits or something similar. There are variations to the recipe though.

Artichoke dip.

Spinach dip.

Mexican dip-there are multiple varietys of that one.

Antipasto-easy to make but expensive.

Stuffed mushrooms.
 
1 lb of thick sliced bacon (I like Costco's store brand)
1 can pineapple chunks in their own juice
toothpicks

Cut the bacon into 1/3's
wrap a piece of bacon around a piece of pineapple
secure with a toothpick
place onto a wire rack - bake at 375 for 45-60 minutes until bacon is done
Serve.
 

Here's a simple but impressive appy I make to travel...

Goat Cheese and Shallot Toasts

A french Baguette - sliced into rounds
(you can by the rounds already cut up too in some stores like kroger)
8 oz good soft Goat Cheese - room temp
4-6 Tablespoons milk, cream, or half & half
Dash Sea salt
2-3 shallots - minced
3 Tablespoons Peppercorns - any color - a mix would be pretty

Preheat the oven to 350. Spray 2 baking sheets with cooking spray.
If using whole baguette - Cut the baguette on a diagonal into ¼ inch slices. Arrange rounds in a single layer on baking sheets. Bake - turning once - until lightly golden on both sides - about 20 minutes.
In a small skillet, sweat the minced shallots with a dash of salt until translucent - or even until they start to take on some color. Remove from heat, drain and cool.
Put the goat cheese in a bowl and mash it with a fork. Add 1 tablespoon of the cream at a time and mash it in. Continue until you have a soft spreadable consistency. Stir in the cooled shallots.
Put peppercorns in a ziploc baggie, seal and smash to crush the peppercorns, leaving different sized pieces (don't pulverize them).
When ready to serve, spread each baguette toast with some goat cheese spread and top with a sprinkle of the crushed peppercorns. Serves 20 - 24.


If your not looking for fancy - here are some very simple ones that never fail:

Ranch Ball
2 packs Cream Cheese - room temp
1 pack Ranch Dressing mix
Salt and Pepper

Mix, refrigerate, form into a ball, serve with crackers and/or veggies.

Ham Pinwheels

Ham
Flavored Cream Cheese
Scallions

Spread some flavored cream cheese on a piece of ham.
Lay a scallion down the center. Roll up into a tight roll.
Freeze for 30 minutes to harden. Cut into 1/4" - 1/2" rounds.

Old Fashioned Pimento Cheese

1 (2lb) block Velveeta cheese (yes you can use a good cheddar or whatever cheese you like)
1 (7oz) jar Diced Pimentos
1/4 - 1/2 cup mayonnaise
Salt and Pepper to taste

Shred the cheese.* Drain the pimentos and add to cheese.* Add salt and pepper to taset. Stir in just enough mayonnaise to make it all come together - not too much. Chill in fridge - serve cold with crackers, chips, celery…

Shrimp cocktail

Fresh mozz wrapped with prociutto sprinkled with balsamic vinegarette

There are usually some good easy to reheat apps in the freezer section of the supermarket
 
cocktail weiners in BBq sauce. Add favorite sauce, one jar of jelly (apple or grape) and I can of pineapple chunks. Heat in slow cooker.

Pizza Dip:
Spread cream cheese on microwave plate. Cover with pizza sauce and pizza toppings. Microwave 3 minutes and serve with crackers and chips.

Tortilla wraps
Spread herb cream cheese on tortilla. Top with ham and roll up. slice into small bites and serve with salsa.
 
I know its too late but my sister made these at my bridal shower and they were a hit!

Take a pound of bacon and cut into thirds. Wrap a piece of the cut bacon around little smokie or weiner. Secure with toothpick and sprinkle with brown sugar.
Bake at 325 for 40 minutes.

They were gone in no time!
