Father's Day in Disney

We are going on a Grand Gathering that will cross over Father's Day and I am looking to find out if anyone knows what if anything can be done in honor of my Dad. We feel it is more important this year than ever since he is footing the bill for the trip. We are having dinner that night at Cinderella's Castle and I don't know if they will do anything or how to even make arrangements. Any suggestions would be greatly appreciated.
