Father and Son Park activity

I’m planning our next trip and already have ADR for Akershus breakfast for my 11 and 2 years daughters and myself, my husband do not want to go with us, and so does my 10 years old son. We have done character meals in the past that we have all enjoyed, but I want to make this a girl only Princess breakfast. My boys agreed and would love to get ideas of something special for them to do while we are at the breakfast, doesn’t need to be a replacement character breakfast. Thanks for your input
 
Mini golf, a round of golf, sleeping in and swimming, riding the monorail, What does your son want to do?
 

If it doesn't have to be Epcot, they could go to Disney Springs for the Amphicar ride and breakfast at Earl of Sandwich or lunch a the Boathouse. That'd be pretty cool, but you'd be split up for several hours. That may or may not be a positive.:)
 
If you want to stick to the EP area, perhaps they could go to the boat dock at YC and rent a SeaRaycer for a 1/2 hour or so? My DH and DS did this a few years ago and had a blast. They could then meet up with you back in EP.
 
How about an archery lesson at Fort Wilderness? I’m sending my guys this summer.

At the Bike Barn at Disney's Fort Wilderness Resort, Archery Guides teach Guests 7 years of age and up how to use a compound bow; then it's time for target practice!

Most of this 90-minute experience is dedicated to firing at range targets. With class sizes limited to 10 Guests, each marksman receives personalized advice from the Archery Guides to best help you hone your archery skills.

$45 per person. Ages 7 and up.
 
Something I highly recommend, although it is pricey, would be the Wild Africa Trek at Animal Kingdom.

It is about a three hour experience, covering much of the same ground as the Safari Ride. They would get to spend a lot more time with the animals than you do in the Safari Ride, and the cast members take high quality photos throughout.

It starts out walking a unpaved trail that take you to see the hippos up close. You get on a rickety rope bridge (Disney rickety, it is totally safe) and you walk over hundreds of crocodiles. Finally you get in a truck and get to see the Savannah up close, with a lot more time than you get in the Safari ride. Then you get to have lunch on a raised platform in the middle of the Savannah, so you can see elephants, gazelles, lions, rhinos, etc from the platform, either as you are eating or after you eat. It is amazing and would be great for a father/son.

If they don’t want/need to also be at EPCOT, they could do Pirates League or the A Pirate’s Adventures (“treasure hunt”) at MK.
Or Star Wars: Secrets of the Empire at Disney Springs
 
there’s early morning surfing lessons at typhoon lagoon in the wave pool
 
I ditto the Wild Africa Trek although it is great for families and not just father and son. But if they are looking for something fun to do, this is a great one. Or they could do something as simple as breakfast in The Land and then head over to Test Track and Mission Space. This would allow them to knock out some fun rides while you enjoy your Princess breakfast.
 
Guided bass fishing trip around the seven seas lagoon was an awesome guys only time, if they like fishing. We did it last fall and caught a ton of fish. Nothing huge but had a blast.
 
I would go ride Test Track, Mission Space, and then get a soft pretzel at the place nearby and then meet up with the girls to do our FP.
