The day is here to make my selections and let me just say this is a stressful process! I'm just trying to coordinate my ADR's along w/the rides & the times are so crazy, If I run past the 1 hour will they still let you on? Some of the selections I want won't let me chose it! I still have the option to wait in line right if I get to park early? Please enlighten me!

We were just at Disney last week and tried both arriving early and late with the grace period that I saw mentioned here. You can use your FP+ 5 minutes early and 15 minutes late.

You should be able to tweak your FP+s around in order to make ADRs work. You do have to move things around a lot but it can be done.
I tend to leave a good 90 mins for most ADRs. If you have an ADR at, say, 2:30, you can have a FP that's window closes at 2:15. And another that has a window from 3:30-4:30.
