I'm confused about FP reservations and annual passes. Thinking of getting the Gold AP. Staying at WDW in June (AKL and Poly) for 3 nights. How do the FP reservations work at my 60 day mark? Can I make my reservations for all 3 days at once? Would I be able to make FP reservations for the day I check-in and check-out?

Yes, at 60 days before check-in you'll be able to book FP for the day you check in through the day you check out. (But until you hit day 60, if you try to book FPs you will only be able to book within the next 30 days. The 60 day window won't open until day 60!)

A bit off topic, but why does Disney charge extra for hopper tickets, then turn around and not allow you to book fast passes at more than 1 park?

Probably for the same reason Epcot and DHS have the tiers. There aren't enough "good" fastpass attractions at those parks.

Oh.. You can only reserve FP for one park per day? I can't reserve a morning ride at AKL and another for a different park for the evening?

Yes, you can just not ahead of time.
You can book 3 FPs ahead of time (60 day mark) at one park.
A hour after the last of those FPs, you can go to another park, and book a FP at one of their kiosks or online through the app.
